Happy Birthday Poppyposts!

Poppyposts celebrates it’s first birthday tomorrow and thank you to everyone who has taken the time to log-in and read the posts. A total of 11,072 views in 12 months-I am amazed and delighted. Here’s to the next 12 months and exciting times.

I have now renewed my subscription which enables me to continue writing and unsurprisingly some themes will remain constant. Fighting the ever-present spectre of depression (currently in remission) is still important as is helping in the campaign against the stigma of mental illness which remains a priority. Talking openly and honestly about my experiences with depression undoubtedly helps to do this and I will continue to do this for as long as it does help. There will also be more trips to Iran which are a rich source of blogging material but I’m not planning on going out anytime soon as I understand that the temperature has dropped close to freezing and they have snow. Brrrr…..too cold.

Children In Need is upon us again and deserves another highlight. This year I have my Pudsey Bear ears to match my T-shirt and fairy cakes. I won’t however be doing the Santa 5k, or BBQ-ing Christmas Dinner in the back garden this year but I do have my new creative venture “The Scrapbook Fairy” to keep me occupied during the long winter days. I will also be working with Sandra, the lovely proprietor of JLT Crafts to put on scrapbooking crops and workshops in her shop in the New Year. This is something I’m really looking forward to.

The last 12 months have been exciting, challenging, sometimes difficult, often dark and disappointing but they have also been amazing. I am blessed with new friends, new activities and a new perspective on life.

Children in Need 2011

Children in Need 2011 will be celebrated on Friday 18 November.

Every year I have made special Pudsey Bear cakes which Will and I used to take round to our neighbours. It is a tradition he may have grown out of but I haven’t and each year sees me disappear into Lakeland to stock up on Pudsey Bear goodies. Muffin and fairy-cake cases, Pudsey cake toppers and biscuit cutters all ready to make yummy cakes and biscuits. 

My favourite Pudsey Bear recipe is for chocolate and vanilla sponge fairy cakes which also hide a chunk of chocolate in the middle!  Here are the instructions. Have fun and enjoy!

Pudsey Bear Cakes-makes 12

For the cakes you will need;

12 fairy-cake cases (Pudsey Bear ones available from Lakeland)
115g butter
115g caster sugar
2 large eggs, beaten
150g self-raising flour
1 tsp baking powder
½ tsp vanilla extract
1 tbsp cocoa powder
1 tbsp milk
12 squares plain chocolate

For the topping (If not using Pudsey Bear cake toppers, again available from Lakeland)
150g icing sugar
2-3 tbsp warm water
Red icing tube

Method

Pre-heat oven to 180c. Cream butter & sugar until light & fluffy. Add egg, little at a time and beat until smooth. Add vanilla extract, flour & baking powder. Mix well. Place a generous amount in one side of each cake case. Add cocoa powder & milk to the remaining mixture and mix well. Place some chocolate mixture next to the original mixture in each case and place a square of chocolate in the centre of each cake. (Yum). Bake for 15-20 mins.

When cool, make up the icing for the topping and smooth over the cake. Add red icing dots to look like Pudsey’s bandage.

Otherwise, decorate with Pudsey Bear cake toppers

Why do we still have children living in abject poverty? Why are our children still being bullied? Why are children with disabilities treated with such disrespect? Every child has a basic human right to a childhood- let’s not send our children to school dirty and hungry. We live in 2010 not 1810………

Children in Need-Pudsey Bear cakes

Well, Children in Need day is almost upon us, celebrated this year in Friday 19 November. What better way to support this wonderful charity than by making Pudsey Bear cakes, simply for your own consumption (they are delicious), or to raise funds. Children and adults alike love these two-tone fairy cakes, all with a chocolate surprise in the middle.

This was one of the first Pudsey Bear recipes released, and is difficult to get hold of now. It also pre-dates the involvement of Lakeland (“Crapland”, as my brother-in-law calls it), “the home of creative kitchenware” , who sell funky Pudsey Bear related items every year to raise money for Children in Need.
